Swiss Chard Salad

8 cups of Swiss chard | Washed, tough stems removed and finely chopped |
3 teaspoons olive oil | |
2 teaspoons red wine vinegar | or cider vinegar |
3 teaspoons lemon juice | |
2 teaspoons honey | |
½ teaspoon salt | |
¼ teaspoon pepper | |
1 cup cucumber | Washed, trimmed and diced |
8 radishes | Washed, trimmed and thinly sliced |
¼ cup golden raisins or dried cranberries | |
¼ cup sunflower seeds | Toasted |

1 | Cut the stems out of the chard. | |
2 | Stack the chard leaves and roll them into a tight cylinder. Cut the cylinder into ¼” slices, giving you long chard ribbon. | |
3 | Put chard into a large bowl and add oil, vinegar, lemon juice, honey, salt and pepper, and toss to coat the chard. | |
4 | Add cucumber, radishes, raison and toss to coat. | |
5 | Top with sunflower seeds. |
