Swiss Chard Salad

Portion Size: 1 cup

Ingredients: Yields: 8 servings

Ingredients Notes: 
8 cups of Swiss chardWashed, tough stems removed and finely chopped
3 teaspoons olive oil
2 teaspoons red wine vinegar or cider vinegar
3 teaspoons lemon juice
2 teaspoons honey
½ teaspoon salt 
¼ teaspoon pepper
1 cup cucumberWashed, trimmed and diced
8 radishesWashed, trimmed and thinly sliced
¼ cup golden raisins or dried cranberries
¼ cup sunflower seedsToasted

1Cut the stems out of the chard. 
2Stack the chard leaves and roll them into a tight cylinder. Cut the cylinder into ¼” slices, giving you long chard ribbon. 
3Put chard into a large bowl and add oil, vinegar, lemon juice, honey, salt and pepper, and toss to coat the chard. 
4Add cucumber, radishes, raison and toss to coat.  
5Top with sunflower seeds.
