Tuna Pesto Pasta Salad with Sun Dried Tomatoes (or Sub. Salmon, Chicken, or Turkey)

Portion Size: 1 cup

Ingredients: Yields: 8 servings

Ingredients Notes: 
1 (16 ounce) package pastaMay use whole grain
1 cup sun dried tomatoes Finely chopped 
2 tablespoons olive oil
3 cups tuna*, cooked diced chicken, cooked diced turkey or cooked or canned salmon*Use water packed tuna
1/2 cup prepared pesto sauceUse recipe in cookbook for pesto sauce. 
2 tablespoons lemon juice

1In a large pot of salted boiling water, cook pasta until al dente, rinse under cold water and drain
2In a large bowl, combine the olive oil, lemon juice, sun dried tomatoes, pesto sauce. Add pasta and toss.  Gently toss in tuna, salmon, chicken or turkey.
3Refrigerate for 1 hourKeep chilled until ready to serve
