Turkey Breakfast Burrito

Portion Size: 1 Turkey Breakfast Burrito 

Ingredients: Yields: 8 servings

Ingredients Notes: 
1 (20-ounce) package  Lean Ground Turkey 
1 teaspoons onion powder
1 teaspoons garlic powder
1  teaspoons paprika
½ teaspoon pepper
2 cups egg substitute
1 green bell pepperWash, trim and dice
1 red bell pepper,Wash, trim and dice
1 (15-ounce) can black beansDrained and rinsed
8 whole wheat tortillas
1 cup salsa
For gluten free (GF): Use GF tortillas. Check all ingredients to ensure they are gluten free.

1Put ground turkey in mixing bowl. Add onion powder, garlic, paprika and pepper; mix thoroughly. 
2Refrigerate mixture for at least 30 minutes or overnight
3Pre-heat non-stick skillet to medium-high and coat lightly with cooking spray. Add egg substitute; stir well. Cook until temperature reaches 165°F.
4Cook turkey in a separate pan.  Reduce heat to medium. Add bell peppers and sauté with meat 5 minutes, continuing to stirAlways cook to well-done, as measured by a meat thermometer.
5Add beans to skillet with turkey. 
6Cook 2 to 3 minutes longer; fill tortillas with mixture and eggs. Top with Salsa
