Waldorf Turkey Sandwiches

Portion Size: ½ cup turkey mixture in pita. 

Ingredients: Yields: 8 servings

Ingredients Notes: 
16 Ounces Diced roasted turkey breast
1/2 Cup apple (any kind)Washed, cored, and finely chopped
1/2 Cup celeryWashed, trimmed and finely chopped
1/4 Cup crushed pineapple Well drained. Use juice packed or rinse. 
1/4 Cup raisins
3 Tablespoons unsalted walnuts
1/4 Cup honey Dijon salad dressing(see recipe in cookbook or use prepared)
8 Large lettuce leaves Washed
16 Slice bread or 8 pita pocketsMay use whole wheat 


Steps:Directions: Critical Control Point /Quality Assurance
1In a small bowl, combine all ingredients except lettuce and bread.  
2Mix well. Place lettuce leaf on each of sandwich.  
3Divide evenly and top each sandwich with mixture.
