Western Sandwiches

Portion Size: 1 Western Sandwich

Ingredients: Yields: 8 servings

Ingredients Notes: 
8 Eggs, beatenCan use egg substitute. Pasteurized eggs recommended. 
1 Cup nonfat milk
2 Cups chopped, cooked lean ham
1/2 Cup onionWash, peel and mince
1/4 Cup green pepperWash, trim and chop fine
Salt and pepper to taste
2 Tablespoons margarine
8 Slices American cheese
8 small rollsMay use whole wheat
For gluten free (GF): Use GF rolls. Check all ingredients to ensure they are gluten free.

1Combine egg, milk, ham, onion, green pepper, and season with salt and pepper
2Heat large skillet and melt margarine
3Pour the egg mixture into the hot pan and cook until almost set, then and cook 1 minute longerCook until internal  end temperature is 160 ° degrees F.
4Slice warm rolls and top with cheese
5Divide egg mixture into 8 pieces and serve with rolls
