Western Sandwiches

| 8 Eggs, beaten | Can use egg substitute. Pasteurized eggs recommended. |
| 1 Cup nonfat milk | |
| 2 Cups chopped, cooked lean ham | |
| 1/2 Cup onion | Wash, peel and mince |
| 1/4 Cup green pepper | Wash, trim and chop fine |
| Salt and pepper to taste | |
| 2 Tablespoons margarine | |
| 8 Slices American cheese | |
| 8 small rolls | May use whole wheat |

| 1 | Combine egg, milk, ham, onion, green pepper, and season with salt and pepper | |
| 2 | Heat large skillet and melt margarine | |
| 3 | Pour the egg mixture into the hot pan and cook until almost set, then and cook 1 minute longer | Cook until internal end temperature is 160 ° degrees F. |
| 4 | Slice warm rolls and top with cheese | |
