Bean and Cheese Burrito

8 (8 inch) flour tortilla (no lard variety) | |
1 Cup chopped onion | Washed, trimmed, and chopped |
1 Tablespoon vegetable oil | |
2 (16) Ounce can vegetarian refried beans | |
4 Cups shredded cheddar cheese | For vegan:use vegan cheese |
4 Cups shredded lettuce | Washed, trimmed and shredded |
1 Cup salsa |

1 | Stack tortillas and wrap in foil. | |
2 | Heat in a 350 degree oven for 10 minutes to soften. | |
3 | In a skillet cook onion in oil until tender. | |
4 | Add refried beans. Cook and stir till heated through. | |
5 | Spoon about 1/4 cup bean mixture onto each tortilla just below center. Divide cheddar cheese among tortillas. | |
6 | Folk edge nearest filling up and over just till mixture is covered. | |
7 | Fold in 2 sides just till they meet; roll up. | |
8 | Place on a baking sheet. Bake in a 350 degree oven about 10 minutes or till heated through. | |
9 | Serve with shredded lettuce and salsa. |
