Bean and Cheese Burrito

Portion Size: 1 Burrito

Ingredients: Yields: 8 servings

Ingredients Notes: 
8 (8 inch) flour tortilla (no lard variety) 
1 Cup chopped onionWashed, trimmed, and chopped
1 Tablespoon vegetable oil
2 (16) Ounce can vegetarian refried beans 
4 Cups shredded cheddar cheeseFor vegan:use vegan cheese
4 Cups shredded lettuceWashed, trimmed and shredded
1 Cup salsa

1Stack tortillas and wrap in foil.  
2Heat in a 350 degree oven for 10 minutes to soften.  
3In a skillet cook onion in oil until tender.  
4Add refried beans.  Cook and stir till heated through.  
5Spoon about 1/4 cup bean mixture onto each tortilla just below center.  Divide cheddar cheese among tortillas.  
6Folk edge nearest filling up and over just till mixture is covered.  
7Fold in 2 sides just till they meet; roll up.  
8Place on a baking sheet.  Bake in a 350 degree oven about 10 minutes or till heated through.  
9Serve with shredded lettuce and salsa.
