Cottage Cheese Fruit Plate (not vegan)

Portion Size: 1 cup (½ cup fruit and ½ cup cottage cheese) 

Ingredients: Yields: 8 servings

Ingredients Notes: 
4 Cups of diced or cut up fresh, frozen, or canned fruitUse any combination of your favorite fresh fruits in season.  Two to six different types of fruit work best. Use different colors, textures, and shapes for more variety.  Choose from: apples, apricots, grapes, grapefruit, pineapple, papaya, pears, peaches, prunes, tangerines, blueberries, cantaloupe, cherries, bananas, blackberries, raspberries, boysenberries, raisins, etc. Be creative.  Wash all fruit.

8 Large lettuce leaves  Washed

1Arrange lettuce leaves on serving plate.  
2Scoop 1 Cup cottage cheese on center of lettuce leaves.  
3Arrange fruit around cottage cheese.
4Serve chilled.
