Curried Beef with Apple Couscous (meatless)

Portion Size: 3 oz. meat over ½ c. couscous

Ingredients: Yields: 8 servings

Ingredients Notes: 
2 1/2 pounds imitation beef strips
½ teaspoon black pepper 
1 tablespoon oil
1 large red pepper seeded and cut into thin strips Wash, trim and cut
1 large green pepper, seeded and cut into thin strips Wash, trim and cut
1 cup water 
1 cup apple juice
2 teaspoons low sodium instant vegan beef bouillon granules 
1 ½ cups couscous May use whole wheat
2 applesWash, core and coarsely chop
½ cup chopped unsalted peanuts

1In a large skillet, heat oil over medium heat.
2Add peppers and onions. Cook for 5 minutes.
3Add curry powder. Cook and stir for 1 minute.
4Add the water, beef, pepper, apple juice, and  bouillon granules.
5Bring to boil. Stir in couscous and apple.Cook until internal temperature reaches 145 F degrees for 15 seconds
6Cover and let stand about 5 minutes or until liquid is absorbed.
7To serve, fluff couscous mixture with fork.
