Vegetarian Burgers
Portion Size: 1 Vegetarian burger.
Ingredients: Yields: 8 servings

2 (12 oz.) package firm tofu | Well drained |
1 cup quick oats | |
2 teaspoons vegetable oil | |
1 onion | Wash, peel and mince. |
1 cup celery | Wash, trim and mince |
4 eggs | Beaten |
2 cups shredded low fat cheddar cheese | For vegan: use vegan cheese |
1 teaspoon salt | |
¼ teaspoon ground black pepper | |
½ cup vegetable oil for frying | |
8 whole grains buns | |
Optional toppings: | |
tomato | Wash and sliced |
onions | Wash, trimmed and sliced |
pickles | Sliced |
lettuce | Wash, trimmed and chopped |
ketchup | |
mustard | |
Thousand Island dressing or mayonnaise | Use lowfat . For vegan use vegan mayonnaise |

1 | Chop tofu finely and place in bowl with onion and celery. | |
2 | Mix in egg, oats, cheese, salt and pepper until thoroughly combine. | |
3 | Heat a large skillet over medium-high heat and pour in a ½ cup vegetable oil (oil should be ¼ inch deep.) | |
4 | Drop tofu mixture into pan in 8 equal portions. | |
5 | Flatten with a spatula to form patties. | |
6 | Fry 5 to 7 minutes on each side, until golden. | |
7 | Serve with whole grain buns and top with additional toppings. |
