Zucchini Hummus Wraps

Portion Size: 1 cup

Ingredients: Yields: 8 servings

Ingredients Notes: 
8 (8 inch) sized flour tortillas (no lard variety) 
1/2 pound shredded lowfat cheddar cheese or goudaFor vegan: use vegan cheese 
2 teaspoons canola oil
2 large zucchiniWashed,ends removed, and sliced length wise into strips
2 small tomatoesWashed, cored and diced
1 small red onion Washed, peeled and sliced thin
1 cup fresh kale, spinach or romaine lettuceWashed, trimmed and finely chopped
2 cups hummus

1Heat skillet to medium high heat. Toss zucchini with canola oil and saute in pan. Cook until tender. Remove from pan. 
2Place tortilla in pan just until warm and pliable. 
3To assemble wraps. Add ¼ cup hummus, cheese, zucchini, tomato, red onion and kale (or other green) 
4Wrap tightly and enjoy immediately.
