Mediterranean White Bean and Pasta Salad

Portion Size: 1 cup

Ingredients: Yields: 8 servings

Ingredients Notes: 
3 (15 oz.) cans no added salt white beansDrained and rinsed
1 lb. pastaMay use any size/shape.
1 cucumberWashed, trimmed and diced
1 cup tomatoesWashed, trimmed and diced
½ cup red onionWashed, peeled and diced. (or may use any onion)
½ cup red wine vinegar
3 teaspoons basil
½ teaspoon black pepper and saltTo taste
½ cup olive oil 
¼ cup Parmesan cheese

1Prepare pasta according to directions on package. Drain.
2Toss all ingredients. Chill before serving.
