Sloppy Joe Cornbread Casserole

Portion Size: ½ c. on 1 small bun

2  pounds lean ground beef
2 (15 oz.) cans of sloppy joe sauce.(such as Manich)
2 (8.5 oz.) boxes cornbread mix
2/3 cup nonfat milk,
1 ½ teaspoon baking powder
2 large eggs

1Heat ground beef, onion, celery, and green peppers in a skillet. Cook until ground beef is no longer pink. Drain fat. Stir in sloppy joe sauce. Simmer 10 minutes.Cook until internal temperature reaches 165 F degrees for 15 seconds
2In a bowl combine cornbread mix, milk, baking powder and eggs.
3Preheat oven to 350F degrees. In a baking pan spray with nonstick cooking spray. Add meat mixture and spread to cover bottom of pan. Spread corn bread mixture on top. Bake 20 to 25 minutes until golden brown.
