Curried Beef with Apple Couscous
Portion Size: 3 oz. meat over ½ c. couscous
Ingredients: Yields: 8 servings

2 1/2 pounds boneless beef top sirloin steak, cut into thin slices across the grain | Trim all visible fat |
½ teaspoon salt | |
½ teaspoon black pepper | |
1 tablespoon oil | |
1 large red pepper seeded and cut into thin strips | Wash, trim and cut |
1 large green pepper, seeded and cut into thin strips | Wash, trim and cut |
1 cup water | |
1 cup apple juice | |
2 teaspoons low sodium instant beef bouillon granules | |
1 ½ cups couscous | May use whole wheat |
2 apples | Wash, core and coarsely chop |
½ cup chopped unsalted peanuts |

1 | Sprinkle steak with salt and pepper. | |
2 | Grill beef over medium coals or sauté in large skillet. | Cook until internal temperature reaches 145 F degrees for 15 seconds |
3 | In a large skillet, heat oil over medium heat. | |
4 | Add peppers and onions. Cook for 5 minutes. | |
5 | Add curry powder. Cook and stir for 1 minute. | |
6 | Add the water, apple juice, and bouillon granules. | |
7 | Bring to boil. Stir in couscous and apple. | |
8 | Cover and let stand about 5 minutes or until liquid is absorbed. | |
9 | To serve, fluff couscous mixture with fork. Thinly slice steak across the grain. | |
10 | Serve steak slices over couscous mixture. Sprinkle with peanuts. |
