Banana Bread

Portion Size: 1 Slice

1 3/4 cup flour
2/3 cup sugar
2 teaspoons baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1 cup mashed ripe bananas
1/3 cup margarine
2 tablespoons nonfat milk
2 eggs 
1/4 cup chopped nuts(optional)
For gluten free (GF): Use GF all purpose flour and GF baking powder. Always check each ingredient to be sure it is gluten free.

1In a large mixer bowl combine 1 cup of the flour, the sugar, baking powder, baking soda, and salt.
2Add mashed banana, margarine, and milk.
3Beat with an electric mixer on low speed till blended, then on high speed for 2 minutes.
4Add eggs and remaining flour and beat till blended.
5Stir in nuts.
6Pour batter into a loaf pan sprayed with nonstick spray. 
7Bake in a 350 degree oven for 55 to 60 minutes or till a toothpick inserted near the center comes out clean
8Cool for 10 minutes on a wire rack.
9Remove from the pan.Store in air tight container for up to 72 hours.  May freeze for up to 30 days
