Chicken Breasts with Apple Mustard Glaze

Portion Size: 3 oz. boneless, 5 oz. with bone

Ingredients: Yields: 8 servings

Ingredients Notes: 
8 boneless skinless chicken breasts (3 ½ oz. each)Trim all visible fat. 
½  teaspoon black pepper
¼ cup oil
1 teaspoon salt 
½  cup apple juice
¼ cup apple jelly 
¼ cup Dijon mustard

1Season chicken with salt and pepper.
2In a large nonstick skillet, heat oil over medium high heat.
3Brown chicken 2 minutes on one side
4In a small bowl combine apple juice, jelly and mustard
5Turn chicken  and add apple juice, jelly and mustard to skillet
6Reduce heat to low, cover and cook 5-6 minutes. To ensure doneness check with meat thermometer. Cook to 165°F for 15 seconds. (For chicken cook to 165 F)
7Serve hot.
