Chicken Cordon Bleu

2 1/2 Pounds cooked chicken breasts, boneless skinless | Butterflied and pounded to 1/4-inch thickness |
1/2 teaspoon salt | |
1/4 teaspoon pepper | |
8 Slices Lowfat Swiss cheese | |
4 Slices cooked lean ham | Cut into halves |
1/2 cup breadcrumbs | |
1 teaspoon olive oil | |
2 teaspoon Dijon mustard |

1 | Preheat oven to 375 degrees. Season both sides with salt and pepper. | |
2 | In a small bowl mix together breadcrumbs and olive oil. Set aside. | |
3 | Spray baking dish with nonstick cooking spray and place chicken (butterflied open) on baking sheet. | |
4 | Spread ham slice over one half of each chicken breast. Layer slices on top of ham slices. | |
5 | Fold turkey over the ham and cheese. Brush the top of each breast with Dijon mustard. | |
6 | Cover with breadcrumbs and olive oil mixture. | |
7 | Bake in oven until temperature 30 minutes. | Instant read thermometer needs to read 165 degrees F. |
