Chicken Cordon Bleu

Portion Size: 4 oz.

Ingredients Notes: 
2 1/2 Pounds cooked chicken breasts, boneless skinlessButterflied and pounded to 1/4-inch thickness
1/2 teaspoon salt
1/4 teaspoon pepper
8 Slices Lowfat Swiss cheese
4 Slices cooked lean ham Cut into halves
1/2 cup breadcrumbs
1 teaspoon olive oil
2 teaspoon Dijon mustard
For gluten free (GF): use GF breadcrumbs. Always check each ingredients to be sure it is gluten free.

1Preheat oven to 375 degrees. Season both sides with salt and pepper. 
2In a small bowl mix together breadcrumbs and olive oil. Set aside.  
3Spray baking dish with nonstick cooking spray and place chicken (butterflied open) on baking sheet.  
4Spread ham slice over one half of each chicken breast.  Layer slices on top of ham slices.
5Fold turkey over the ham and cheese.  Brush the top of each  breast with Dijon mustard.
6Cover with breadcrumbs and olive oil mixture.  
7Bake in oven until temperature 30 minutes.Instant read thermometer needs to read 165 degrees F.
