Chicken Gnocchi with Sun Dried Tomatoes

1-pound package gnocchi | |
1/2 cup sun dried tomatoes or 1 c. fresh tomatoes | Washed, trimmed and chopped |
4 cups baby spinach | Washed, trimmed and chopped |
1/2 cup Parmesan cheese |

1 | Prepare Gnocchi according to package directions; drain and set aside. | |
2 | Sauté chicken sausage in oil in a large skillet over medium-high heat for 15 minutes, turning occasionally until lightly browned and temperature reaches 165 degrees F. | |
3 | Add sun dried tomatoes and spinach. | |
4 | Stir gently until spinach wilts. | |
5 | Remove from heat, stir in Parmesan cheese. | |
6 | Add gnocchi to sauce and toss. |
