Swiss Chard Salad
Portion Size: 1 cup

| 8 cups of Swiss chard | Washed, tough stems removed and finely chopped |
| 3 teaspoons olive oil | |
| 2 teaspoons red wine vinegar | or cider vinegar |
| 3 teaspoons lemon juice | |
| 2 teaspoons honey | |
| ½ teaspoon salt | |
| ¼ teaspoon pepper | |
| 1 cup cucumber | Washed, trimmed and diced |
| 8 radishes | Washed, trimmed and thinly sliced |
| ¼ cup golden raisins or dried cranberries | |
| ¼ cup sunflower seeds | Toasted |

| 1 | Cut the stems out of the chard. | |
| 2 | Stack the chard leaves and roll them into a tight cylinder. Cut the cylinder into ¼” slices, giving you long chard ribbon. | |
| 3 | Put chard into a large bowl and add oil, vinegar, lemon juice, honey, salt and pepper, and toss to coat the chard. | |
| 4 | Add cucumber, radishes, raison and toss to coat. | |
| 5 | Top with sunflower seeds. |
