German Hot Potato Salad

Portion Size: ½ cup

Ingredients: Yields: 8 servings

Ingredients Notes: 
8 medium potatoes Washed, peeled and sliced 
4 strips baconDiced 
¼ cup onionWashed, peeled and chopped
¼ cup celery Washed, trimmed and chopped
1 dill pickleChopped
¼ cup water 
½ cup vinegar 
½ teaspoon salt 
½ teaspoon sugar
1/8 teaspoon paprika 
¼ teaspoon dry mustard

1Place potatoes in a saucepan. Cover with water.
2Bring to boil. Reduce heat and cook until tender.
3Remove from heat and drain. Let cool and peel.
4In a large skillet sauté the bacon. 
5Add onion and celery and sauté. Add dill pickle and cook for 1 minute. Add potatoes, water, vinegar, sugar, salt, paprika and mustard. Stir gently.Cook until internal temperature reaches 165°F.
6Heat through. Serve hot or cold.
