Asparagus with Lemon
Portion Size: ½ cup asparagus

| 2 bunches asparagus (approx. 4 cups) | Washed and trimmed |
| 1 tablespoon olive oil | |
| 2 tablespoons grated Parmesan cheese | Optional |
| 2 cloves garlic, minced | Washed, peeled and minced |
| 1 lemon |

| 1 | Preheat oven to 425°F. | |
| 2 | Wash and trim end of asparagus by remove woody ends: grasp root end of stalk and bend until it snaps. | |
| 3 | Arrange asparagus in baking dish. | |
| 4 | Drizzle with olive oil, Parmesan Cheese and garlic. Toss to coat. | |
| 5 | Remove zest from lemon and add to asparagus. | |
| 6 | Add juice from lemon to asparagus. | |
| 7 | Bake in oven until tender, about 12 to 15 minutes. Season with salt and pepper. | Cook until internal temperature reaches 135°F. |
