Baked Winter Squash
Portion Size: ½ cup squash

| 4 pounds winter squash | May use Acorn or butternut squash, Washed, cut in half and seeds removed. |
| 1 tablespoon olive oil or canola oil | |
| salt and pepper, to taste |

| 1 | Preheat the oven to 400°F. | |
| 2 | Spilt the squash and remove the seeds. | |
| 3 | Sprinkle the cut sides with salt. | |
| 4 | Place cut side down in a baking dish and bake for about 40-50 minutes or until squash is easily pierced with a fork. | |
| 5 | Turn and make indentations with fork across the cut side of the squash. | |
| 6 | Spread with oil. Return to the oven for a minute or two. | Cook until internal temperature reaches 135°F. |
Variations: Winter Squash can be steamed, braised, microwaved, roasted, stir fry, boiled and mashed. May add choice of herbs or spices for flavor.
