Roasted Brussels Sprouts with Red Onion and Pine Nuts

| 1 large red onion, | Washed, peeled and thinly sliced |
| 1 tablespoon olive oil | |

| ¼ cup unsalted pine nuts |

| 1 | Preheat oven to 425°F. | |
| 2 | In a large bowl toss Brussels sprouts, onion, olive oil, salt, and pepper. | |
