French Fried Onion Rings
Portion Size: ½ cup onion rings

| 4 large Bermuda onions | Washed, peeled and in ¼ inch slices |
| 2 cups nonfat milk | |
| ½ cup flour | |
| salt, to taste | |

| 1 | Separate the onion slices into rings. | |
| 2 | Put them in a shallow dish and pour milk over them. | |
| 3 | Soak for 30 minutes, turning once or twice. | |
| 4 | Mix the flour with a sprinkle of salt, dip the rings into this mixture, coating them all over. | |
| 5 | Heat oil to 370°F and deep fry the rings several at a time until golden on both sides. | Cook until internal temperature reaches 135°F. |
| 6 | Pat free of oil, keep warm while frying the rest, and sprinkle with more salt, if desired, before serving. |
