Peas and Cheese Salad

2/3 cup light mayonnaise 
Salt and pepper to taste 
2 tablespoons  onionsWashed, peeled and minced
1/3 cup red bell pepperWashed, trimmed and diced
½ cup celeryWashed, trimmed and diced
3 large sweet picklesChopped
4 cups frozen green peasThawed
¾ cup low fat Cheddar cheeseShredded
8 leaves lettuceWash.

1In a large bowl, mix together mayonnaise, salt, pepper, red pepper, onion, celery and pickles until combined. 
2Stir in peas and cheese. 
3Chill until ready to serve. 
4Serve over lettuce leaves.
