Peas and Cheese Salad

| 2 tablespoons onions | Washed, peeled and minced |
| 1/3 cup red bell pepper | Washed, trimmed and diced |
| ½ cup celery | Washed, trimmed and diced |
| 3 large sweet pickles | Chopped |
| 4 cups frozen green peas | Thawed |
| ¾ cup low fat Cheddar cheese | Shredded |
| 8 leaves lettuce | Wash. |

| 1 | In a large bowl, mix together mayonnaise, salt, pepper, red pepper, onion, celery and pickles until combined. | |
