Creamy Cauliflower Salad
Portion Size: 1/2 cup
Ingredients: Yields: 8 servings

| 4 cups cauliflower | Wash and separate 1 head of cauliflower into florets, and coarsely chop. |
| 4 green onions | Washed, trimmed and sliced. (including greens) |
| 2 celery ribs | Washed, trimmed and diced. |
| 1 cup shredded lowfat cheddar cheese | |
| 1 cup light ranch dressing | (see recipe in cookbook) |
| 3 Tablespoons chopped fresh parsley | Washed and chopped. |
| Cooked and crumbled bacon | (optional) |
