Cucumber and Radish Salad

Portion Size: 1/2 cup

Ingredients: Yields: 8 servings

Ingredients Notes: 
1/4 cup vinegar or lemon juice
2 tablespoons olive oil
2 tablespoons sugar
2 tablespoons parsley flakes
4 medium cucumbersWashed, halved lengthwise, and thinly sliced
½ cup sliced radishes
1 small onionPeeled, washed, thinly sliced, and separated into rings
1 teaspoon salt 
Dash of pepper

1Stir together vinegar, sugar, oil, celery seed if desired, salt and pepper.
2Add cucumber, radishes, and onion slices and toss to coat.  Cover and chill. Stir before serving.
