Roasted Sweet Potatoes

¼ cup olive oil 
3 lbs. sweet potatoesWashed, peeled and diced.
¼ cup brown sugar 
1 teaspoon cinnamon 
1 teaspoon salt 
¼ teaspoon pepper

1Preheat oven to 375 degrees. 
2In a large bowl add sweet potatoes, oil, brown sugar, cinnamon, salt and pepper. 
3Toss to coat. 
4Spray a cooking dish with non-stick cooking spray. 
5Bake in oven for 30-40 minutes until potatoes are tender and golden brown.Cook until internal temperature reaches 165°F.
