Sweet Potato Wedge

8 small sweet potatoesWashed, peeled and sliced lengthwise into wedges

1Preheat oven to 400 degrees F, 200 degrees C. 
2Lightly grease a baking sheet. 
3In a large bowl, mix olive oil and paprika. 
4Add potato sticks and stir by hand to coat. 
5Place on the prepared baking sheet. 
6Bake for 40 minutes in the preheated oven or until potatoes are tender.Internal temperature 135 F.
