Sweet Potato Wedge

| 8 small sweet potatoes | Washed, peeled and sliced lengthwise into wedges |

| 1 | Preheat oven to 400 degrees F, 200 degrees C. | |
| 2 | Lightly grease a baking sheet. | |
| 3 | In a large bowl, mix olive oil and paprika. | |
| 4 | Add potato sticks and stir by hand to coat. | |
| 5 | Place on the prepared baking sheet. | |
| 6 | Bake for 40 minutes in the preheated oven or until potatoes are tender. | Internal temperature 135 F. |
