Tuna Pesto Pasta Salad with Sun Dried Tomatoes (or Sub. Salmon, Chicken, or Turkey)

1 (16 ounce) package pasta | May use whole grain |
1 cup sun dried tomatoes | Finely chopped |
2 tablespoons olive oil | |
3 cups tuna*, cooked diced chicken, cooked diced turkey or cooked or canned salmon | *Use water packed tuna |
1/2 cup prepared pesto sauce | Use recipe in cookbook for pesto sauce. |
2 tablespoons lemon juice |

1 | In a large pot of salted boiling water, cook pasta until al dente, rinse under cold water and drain | |
2 | In a large bowl, combine the olive oil, lemon juice, sun dried tomatoes, pesto sauce. Add pasta and toss. Gently toss in tuna, salmon, chicken or turkey. | |
3 | Refrigerate for 1 hour | Keep chilled until ready to serve |
