Tuna Salad Sandwiches

| 3 Cups canned tuna | Drained, water packed |
| 2 Cups diced celery or cucumber | Washed, trimmed and diced |
| 1/4 Cup onion | Washed, peeled and chopped |
| 1 Tablespoon chives or parsley | May use dried or fresh. |
| 1/2 Cup light mayonnaise | |
| 16 slices of bread | May use whole grain |
| Lettuce and tomato (optional) | Washed, trimmed and sliced |
