Waldorf Turkey Sandwiches
Portion Size: ½ cup turkey mixture in pita.
Ingredients: Yields: 8 servings

| 16 Ounces Diced roasted turkey breast | |
| 1/2 Cup apple (any kind) | Washed, cored, and finely chopped |
| 1/2 Cup celery | Washed, trimmed and finely chopped |
| 1/4 Cup crushed pineapple | Well drained. Use juice packed or rinse. |
| 1/4 Cup raisins | |
| 3 Tablespoons unsalted walnuts | |
| 1/4 Cup honey Dijon salad dressing | (see recipe in cookbook or use prepared) |
| 8 Large lettuce leaves | Washed |
| 16 Slice bread or 8 pita pockets | May use whole wheat |

| 1 | In a small bowl, combine all ingredients except lettuce and bread. | |
| 2 | Mix well. Place lettuce leaf on each of sandwich. | |
| 3 | Divide evenly and top each sandwich with mixture. |
