Pork Chop with Apple Curry Sauce
Portion Size: 3 oz. boneless, 5 oz. with bone

| 8 boneless pork chops, ½ inch thick | Trim all visible fat |
| 1 teaspoon salt | |
| ½ teaspoon black pepper | |
| ¼ cup oil | |
| 1 ½ cup apple cider or juice | |
| 1 cup chicken broth, reduced salt | |
| 1 Tablespoon cornstarch | |
| 2 Tablespoons water | |
| 1 teaspoon ground ginger | |
| 1 teaspoon ground curry |

| 1 | In a large nonstick skillet, heat oil over medium high heat. | |
| 2 | Brown chops and season with salt and pepper. | Cook to 145° F for 15 seconds |
| 3 | Add apple cider, ginger and curry and broth. Cover and simmer for 8 minutes. | |
| 4 | In a small bowl combine cornstarch and water Add cornstarch mixture to chops and bring to boil. Cook until sauce thickens. Serve hot. |
