Vegetarian Burgers

Portion Size: 1 Vegetarian burger. 

Ingredients: Yields: 8 servings

Ingredients Notes: 
2 (12 oz.) package firm tofuWell drained
1 cup quick oats
2 teaspoons vegetable oil 
1 onion Wash, peel and mince. 
1 cup celeryWash, trim and mince
4 eggsBeaten 
2 cups shredded low fat cheddar cheeseFor vegan: use vegan cheese 
1 teaspoon salt
¼ teaspoon ground black pepper
½ cup vegetable oil for frying
8 whole grains buns
Optional toppings:
tomato Wash and sliced
onionsWash, trimmed and sliced
picklesSliced
lettuceWash, trimmed and chopped
ketchup 
mustard 
Thousand Island dressing or mayonnaise Use lowfat . For vegan use vegan mayonnaise

1Chop tofu finely and place in bowl with onion and celery.
2Mix in egg, oats, cheese, salt and pepper until thoroughly combine. 
3Heat a large skillet over medium-high heat and pour in a ½ cup vegetable oil (oil should be ¼ inch deep.)
4Drop tofu mixture into pan in 8 equal portions. 
5Flatten with a spatula to form patties. 
6Fry 5 to 7 minutes on each side, until golden. 
7Serve with whole grain buns and top with additional toppings.
