Baked Rigatoni with Beef (Meatless)

2 lbs. lean ground beef, imitation | |
1 lb. rigatoni pasta | For Vegans: use vegan pasta |
2 cups shredded low fat mozzarella cheese | For Vegans: use vegan cheese |
½ c. Parmesan cheese | For Vegans: use vegan cheese |

1 | Preheat oven to 350 degrees. | |
2 | Combine imitation beef and sauce in a large pot. | |
3 | Cook for 10 minutes until hot. | Minimum Temperature 165°F for 15 seconds |
4 | Cook pasta according to directions on package. Drain. | |
5 | Combine pasta with meat mixture. | |
6 | In a large baking dish spread pasta and meat mixture. | |
7 | Top with mozzarella cheese. | |
8 | Bake for 30 minutes or until hot. | Temperature check to 165 degrees F. |
9 | Garnish with Parmesan cheese. |
