Beef Tips and Noodles (meatless)
Portion Size: ½ cup beef tips and ½ cup noodles
Ingredients: Yields: 8 servings

| 16 oz. package of noodles | For vegan: use vegan pasta |
| 2 1/2 lb. imitation beef chunks | |
| 1 can evaporated fat free milk | For vegan: use soy milk |
| 2 tablespoons all purpose flour | |
| 1 onion, chopped | Wash, peel and chop |
| 2 gloves garlic, minced | Wash, peel and mince |
| 1 (8oz) package fresh sliced mushrooms | Wash, trim and slice |
| 2 cups reduced sodium vegan beef broth | |
| 1/2 teaspoon ground black pepper |

| 1 | Preheat oven to 400 degrees. | |
| 2 | In a baking pan, combine the milk, beef broth, garlic, mushrooms, flour and onion. | |
| 3 | Mix thoroughly with beef tips. | |
| 4 | Bake in oven for 1 hour. | Cook until internal temperature reaches 165 F degrees for 15 seconds |
| 5 | Cook pasta according to directions on package. Drain. | |
| 6 | Serve beef tips and sauce over noodles |
