Curried Beef with Apple Couscous (meatless)
Portion Size: 3 oz. meat over ½ c. couscous

2 1/2 pounds imitation beef strips | |
½ teaspoon black pepper | |
1 tablespoon oil | |
1 large red pepper seeded and cut into thin strips | Wash, trim and cut |
1 large green pepper, seeded and cut into thin strips | Wash, trim and cut |
1 cup water | |
1 cup apple juice | |
2 teaspoons low sodium instant vegan beef bouillon granules | |
1 ½ cups couscous | May use whole wheat |
2 apples | Wash, core and coarsely chop |
½ cup chopped unsalted peanuts |

1 | In a large skillet, heat oil over medium heat. | |
2 | Add peppers and onions. Cook for 5 minutes. | |
3 | Add curry powder. Cook and stir for 1 minute. | |
4 | Add the water, beef, pepper, apple juice, and bouillon granules. | |
5 | Bring to boil. Stir in couscous and apple. | Cook until internal temperature reaches 145 F degrees for 15 seconds |
6 | Cover and let stand about 5 minutes or until liquid is absorbed. | |
7 | To serve, fluff couscous mixture with fork. |
