Italian Sausage Soup with Tortellini

2 pounds lean sweet Italian sausage (turkey) | Use bulk or links. |
1 medium onion | Washed, peeled and chopped fine |
1 teaspoon garlic powder | |
2 tablespoon all purpose flour | |
5 cups beef broth | |
1 cup water | |
1 large can (16 oz.) chopped tomatoes | |
1 cup sliced thin carrots | Washed, peeled and sliced |
1 teaspoon basil | |
1/2 teaspoon oregano | |
1 (8 oz.) can tomato sauce | |
1 1/2 cup sliced zucchini | Washed, trimmed and sliced. |
8 ounces tortellini pasta | |
2 tablespoons parsley flakes | |
1 bag fresh baby spinach | Washed and trimmed |
1/4 cup Parmesan cheese |

1 | In a large stock pot add sausage and brown. | |
2 | Remove sausage and drain, reserving 1 tablespoon of the drippings. | |
3 | Slice sausage. | |
4 | Saute onion and garlic in the drippings. Add flour. | |
5 | Stir in beef broth, water, tomatoes, carrots, basil, oregano, tomato sauce, and sausage. | |
6 | Bring to a boil. | |
7 | Reduce heat; simmer uncovered for 30 minutes. | |
8 | Stir in zucchini and parsley. | |
9 | Simmer covered for 30 minutes. | |
10 | Add tortellini and simmer for 10 minutes. | |
11 | Add spinach and cook for 3 minutes with lid off. | |
12 | Top with Parmesan cheese. |
