White Bean Breakfast Hash
Portion Size: 1 cup

| 2 cans no added salt white beans | Drained and rinsed |
| ΒΌ cup olive oil | |
| 2 teaspoons garlic powder | |
| 1 onion | Washed, peeled and minced |
| 1 cup low sodium chicken broth | May use 1 t. granules plus 1 cup water |
| 2 cups light sour cream | |
| 1 lb. bag hash brown potatoes | To taste |
| Β½ teaspoon pepper and salt | To taste |
| 2 cups shredded cheddar cheese |

| 1 | Preheat oven to 350F degrees. | |
| 2 | Spray baking dish with non stick cooking spray. | |
| 3 | In a large bowl, combine beans, oil, garlic, onion, sour cream, hash browns, salt, pepper and 1 cup cheese. | |
| 4 | Transfer to baking dish. Top with remaining cheese. Cover with foil. Bake for 40-45 minutes. | Cook until internal temperature reaches 165F degrees. |
