White Bean Breakfast Hash

Portion Size: 1 cup

Ingredients: Yields: 8 servings

Ingredients Notes: 
2 cans no added salt white beansDrained and rinsed
ΒΌ cup olive oil
2 teaspoons garlic powder
1 onionWashed, peeled and minced
1 cup low sodium chicken brothMay use 1 t. granules plus 1 cup water
2 cups light sour cream
1 lb. bag hash brown potatoesTo taste
Β½ teaspoon pepper and saltTo taste
2 cups shredded cheddar cheese

1Preheat oven to 350F degrees.
2Spray baking dish with non stick cooking spray.
3In a large bowl, combine beans, oil, garlic, onion, sour cream, hash browns, salt, pepper and 1 cup cheese.
4Transfer to baking dish. Top with remaining cheese. Cover with foil. Bake for 40-45 minutes.Cook until internal temperature reaches 165F degrees.
