Mediterranean White Bean and Pasta Salad

| 1 lb. pasta | May use any size/shape. |
| 1 cucumber | Washed, trimmed and diced |
| 1 cup tomatoes | Washed, trimmed and diced |
| ½ cup red onion | Washed, peeled and diced. (or may use any onion) |
| ½ cup red wine vinegar | |
| 3 teaspoons basil | |
| ½ teaspoon black pepper and salt | To taste |
| ½ cup olive oil | |
| ¼ cup Parmesan cheese |
