Mashed Potatoes

8 Medium potatoes
1/2 Teaspoon salt
1/2 Cup nonfat milk
3 Tablespoons margarine
1/4 Teaspoon pepper
Wash and pare potatoes. Cut into six sections. In a medium sauce pan, cover with water and cook over medium heat 20 to 25 minutes or until the potatoes are tender when pierced with a fork. Drain potatoes in a colander. Return the potatoes to the sauce pan and with potato masher mash until no lumps remain. Add salt, milk, pepper, and margarine. Mash until light and fluffy. Serves 8.
