Sauteed Vegetables

3 Tablespoons margarine, butter, olive oil, or sesame oil
2 Pounds vegetables of choice, cut in 1/2 inch slices or pieces
Vegetables can be used individually or in a combination of 2 or 3, Suggested vegetables: asparagus, green beans, broccoli, cauliflower, bell peppers, carrots, pea pods, mushrooms, onions, summer squash, zucchini
Salt and pepper to taste
Wash and prepare vegetables. Melt margarine in a skillet, add the vegetables and cook over high heat, stirring and tossing continuously. Cook 4 to 5 minutes or till vegetable are tender-crisp. Season with salt and pepper. Serves 8.
