Lima Bean Salad

Portion Size: ½ cup

4 cups of frozen baby lima beans 
¼ cup of green onionsWashed, trimmed and sliced
2 tablespoons dried parsley 
1 hard-cooked eggChopped and optional
1/3 cup of light mayonnaise dressing 
1/3 cup of light sour cream 
1 tablespoon of vinegar 
1 teaspoon of dried dill weed 
½ teaspoon of salt 
1/8 teaspoon of pepper 
8 lettuce leavesWashed and trimmed
4 tomatoesWashed, trimmed and cut into wedges

1Cook the lima beans according to the package directions. 
2Cool under cold running water. Drain well. Place in a large bowl. 
3Add the onions, parsley and egg. 
4Combine the mayonnaise dressing, sour cream, vinegar, dill weed, salt and pepper. Add to the lima beans. 
5Toss to mix. Chill. Serve on lettuce with tomato wedges.
