Chicken and Pasta with Lemon Dressing

Portion Size: 1 cup

Ingredients: Yields: 8 servings

Ingredients Notes: 
16 oz. package of dried  rotini pastaMay use whole grain 
1/3 cup fresh lemon juice
1 teaspoon dried basil
1 tablespoon Dijon mustard
2 Tablespoons olive oil
1 teaspoon honey
4 cups chopped cooked chicken or turkeyCook until internal temperature reaches 165°F. 
1/2 teaspoon salt
1/2 teaspoon garlic powder
1/4 teaspoon black pepper
¼ cup feta cheese
For gluten free (GF): use GF pasta. Always check each ingredients to be sure it is gluten free.

1Cook pasta according to package directions. Drain pasta.
2For Dressing in a small bowl whisk together lemon juice, basil, oil, honey, salt, garlic powder, Dijon mustard and black pepper.
3In a large bowl combine pasta, and chicken.
4Add Dressing. Toss gently to coat.
5Chill until ready to serve.
6Top with feta cheese just before serving.
