Chicken Goulash

Portion Size: 1 cup (1/2 cup pasta ½ cup meat mixture)

Ingredients: Yields: 8 servings

Ingredients Notes: 
2 1/2 Pounds boneless skinless chicken breasts or thighsTrim all visible fat. Cut into ½ inch pieces. 
1 teaspoon salt
1/4 teaspoon black pepper. 
2 Tablespoon oil
1 cup onion, choppedWash, peel and dice.
1 cup green bell pepperWash, trim and slice. 
1 cup tomato sauce
1 cup reduced sodium chicken broth
1 tablespoon paprika
1 cup light sour cream 
1 lb. pastaTip: use whole grain pasta
For gluten free (GF): use GF pasta and GF broth. Always check each ingredients to be sure it is gluten free.

1Melt 1 tablespoon oil in a large skillet over medium high heat.  . 
2Lightly brown chicken on all sides
3Add onions and sauté until transparent.  
4Add tomato sauce, broth, green pepper, salt, flour and paprika.  
5Cover the pot and simmer the meat for 30 minutes. Stir in sour cream just before serving.Temperature check. Minimum Temperature 165°F for 15 seconds
6Prepare pasta according to directions on package.
7Serve pasta topped with meat mixture. Serve hot.
