Collard Greens with Garlic
Portion Size: ½ cup collard greens

| 2 pounds collard greens | 2 to 3 large bunches, Washed, trimmed and chopped. Remove tough stems and membranes. |
| 5 to 6 cloves garlic, minced | Washed, peeled and minced |
| 1 tablespoon olive oil | |
| salt and pepper, to taste |

| 1 | Wash collard greens. | |
| 2 | Gather bunches of the leaves together and roll them up into a bundle. | |
| 3 | Thinly slice the bundles crosswise, an easy way to cut the leaves into thin strips. | |
| 4 | In a large pan heat, oil to medium high heat. | |
| 5 | Stir in garlic and cook for 1 minute. | |
| 6 | Add collard greens and sauté stirring frequently. | |
| 7 | Cook until tender crisp. Season with salt and pepper. | Cook until internal temperature reaches 135°F. |
