Collard Greens with Garlic

Portion Size: ½ cup collard greens

Ingredients: Yields: 8 servings

2 pounds collard greens 2 to 3 large bunches, Washed, trimmed and chopped. Remove tough stems and membranes. 
5 to 6 cloves garlic, mincedWashed, peeled and minced
1 tablespoon olive oil
salt and pepper, to taste

1Wash collard greens.
2Gather bunches of the leaves together and roll them up into a bundle.
3Thinly slice the bundles crosswise, an easy way to cut the leaves into thin strips.
4In a large pan heat, oil to medium high heat.
5Stir in garlic and cook for 1 minute.
6Add collard greens and sauté stirring frequently.
7Cook until tender crisp. Season with salt and pepper.Cook until internal temperature reaches 135°F.
