Salmon Quesadillas or Tuna Quesadillas

Portion Size: 1 Quesadilla  

Ingredients: Yields: 8 servings

Ingredients Notes: 
3 Cups drained water packed, canned tuna or salmon
16 oz. low fat cheddar cheese
8 whole grain flour tortillas (burrito size)May use whole grain
1/2 cup diced bell peppersWashed, trimmed and diced
1/2 cup light sour cream
1/4 cup sliced green onionsWashed, trimmed and sliced thin 
1/2 cup salsa
1 avocado (optional)Washed, peeled and diced

1Place tortilla on a flat surface and layer with cheese, diced peppers, and salmon or tuna. Fold in half.
2Heat a non stick pan coated with vegetable oil over medium heat.
3Place quesadilla carefully into heated pan. Heat both sides in pan until golden brown. Turning once.
4Cut into 3 pieces. Garnish with sour cream, salsa, green onion and avocado.
