Salmon Salad Sandwich

Portion Size: 1 sandwich  

Ingredients: Yields: 8 servings

Ingredients Notes: 
3 cups canned salmonDrained, water packed
2 cups diced celery or cucumberWashed, trimmed and diced
1/4 cup onionWashed, peeled and minced
1 tablespoon chives or parsleyMay use dried or fresh. 
1/2 cup light mayonnaise
1 tablespoon lemon juice 
1 teaspoon Dijon mustard
16 slices breadMay use whole wheat bread. 
Lettuce and tomato (optional)Washed, trimmed and sliced 


Steps:Directions: Critical Control Point /Quality Assurance
1Mix Salmon, celery or cucumber, onion, chives or parsley, mayonnaise, lemon juice and Dijon mustard  Spread 1/3 cup mixture on 1 slice bread. Keep chilled until ready to serve
2Garnish with lettuce and tomatoes.
3. Top with 1 slice of bread.
