Tuna and White Bean Salad or Salmon and White Bean Salad

Portion Size: 1 ½ cup  

Ingredients: Yields: 8 servings

Ingredients Notes: 
3 tomatoes Washed, peeled, seeded and diced
1 yellow bell pepperWashed, seeded and diced 
1/4 cup red onionWashed, peeled and diced 
3 cups tuna (or salmon)Use water packed, drained
2 cup white beansDrained and rinsed
8 cups butter lettuceWashed and chopped
2 tablespoons capersDrained  
1 tablespoon parsley flakes
1/4 cup white wine vinegar
1/4 cup fresh lemon juice
1 teaspoon salt
1 pinch ground black pepper

1In a small bowl combine, capers, parsley, white wine vinegar, lemon juice, salt and pepper
2In a large bowl combine tomatoes, yellow pepper, red onion, tuna, and white beans
3Drizzle with dressing and toss to coat.  Serve on bed of lettuceKeep chilled until ready to serve
