Tuna Melt (or Salmon Melt or Turkey Melt or Chicken Melt or Roast Beef Melt)

Portion Size: 1 sandwich 

Ingredients: Yields: 8 servings

Ingredients Notes: 
3 cups tuna, water packed Drained . ( or sub diced cooked meat)
1/2 cup finely chopped celeryWashed, trimmed and minced
1 /2 cup onionWashed, peeled and minced
½ cup margarine
½ cup light mayonnaise
8 oz. low fat Cheddar or Swiss cheese
16 slices breadMay use whole grain

1Mix together tuna, celery, onion and mayonnaise in a small bowl
2Spread margarine on each slice of bread.
Heat non stick pan to medium high heat. Carefully, place bread margarine side down onto heated pan. Top with 1/3 cup tuna mixture and flatten with a spoon. Top with 1 slice cheese. Top with 1 slice of bread with the margarine side out. Cook until golden brown. Turnover and cook until golden brown.
3Repeat until all sandwiches are made. Cut in half.
